Sometimes I look through my pantry and see what is inside. Since last month I scored FREE kraft Parmesan cheese at Albertson’s with that $5/5 printable coupon, the inexpensive butter with the baking sales and FREE pasta….making Fettuccine Alfredo is a perfect choice.
I will tell you that I have two different Fettuccini Alfredo recipes, depending on what I have in my pantry. Normally it all stems on if I happen to have Heavy Cream in my fridge or not. The rest I usually always have on hand.
My ultimate easy favorite recipe is this one (tastes the best too!):
Butter 1/2 cup
Heavy Cream 1 Cup
Parmesan, grated 2 Cups
Fettuccine Noodles, cooked to al dente.
Directions: Heat Butter and Cream to nearly boiling, (don’t want it to boil, so just when it’s almost boiling). Add Parmesan cheese and mix till it is creamy. Salt + Pepper to taste. Pour immediately over cooked Fettuccine Noodles. You might want to consider also making Little Biscuit Bites with this…mmmmm…
If I do not have Heavy Whipping Cream I usually do have a can of evaporated milk in the pantry. So here is the recipe that take a little more work, but turns out almost as yummy as the last sauce.
2 TBSP Butter
2 TBSP Flour
1 Can Evaporated Milk
1 Can Chicken Broth
1 1/2 cups Parmesan Cheese
Directions: You are going to make what is called a roux: Melt the butter in a medium saucepan. Add the flour mixing constantly. Add more flour if needed to get to a consistency of bubbling paste. When the bubbling mix gets a light golden brown in color add the can of evaporated milk and chicken broth. Stirring constantly (I use a whisk..) bring mixture to a boil. Add the Parmesan cheese and remove from heat. Sauce should be creamy and should look like this.
If sauce is too thin, add more Parmesan,if too thick add some water from the pot you boiled your fettuccine noodles in. It is pretty easy to get it how you want it. Add salt + pepper to taste and pour over al dente noodles!
