Freezer French Toast Casserole

This easy make-ahead freezer french toast casserole recipe is a life saver quick and easy breakfast! Sweet, buttery and delicious. Make ahead and bake up later.

Ingredients

  • 6 slices Texas toast bread
  • 3/4 cup milk
  • 6 oz evaporated milk (1/2 can)
  • 3 eggs
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • 1/4 cup butter
  • 1/2 cup brown sugar
  • 1 tbsp maple syrup
  • 1 tbsp evaporated milk
  • 1/2 cup oats

Instructions

  • Preheat oven to 375 °F degrees.
  • Grease an 8" x 8" baking pan (or any 2-quart size pan).
  • Chop or break apart the bread into about 1 inch pieces or squares. Add to a large bowl.
  • In a separate bowl mix together your milk, 6 oz evaporated milk, eggs, cinnamon and vanilla. Whisk until well combined.
  • Pour the liquid mixture over your bread pieces and gently turn over pieces until all the bread pieces are thoroughly soaked. Pour gently into greased baking pan and spread evenly.
  • Make the topping by adding the ingredients to a medium bowl and mixing together until well combined.
  • Spoon topping mixture over the top of the bread mixture in the pan evenly until top is covered.

Make It Now

  • Bake uncovered in the preheated oven for 35-40 minutes until a tester in the center comes out clean and topping is golden brown. Remove from oven and let cool 5 minutes then serve with whipped cream, syrup or a sprinkling of powdered sugar.

Freeze It For Later

  • Wrap the assembled pan tightly with plastic wrap, pressing down to gently remove air. Then cover with foil, label it and freeze it for up to 6 months.
  • To bake, remove from freezer and preheat oven. Remove plastic wrap and foil. Recover with foil and place frozen pan directly into oven and bake for 55 to 60 minutes, removing foil after first 20 minutes. Bake until a tester in the center comes out clean and topping is golden brown. Remove from oven and let cool 5 minutes with whipped cream, syrup or a sprinkling of powdered sugar.

Notes

  • For best results, use crusty or partially dried out day old bread. 1 to 2 days old works best. If you use soft, fresh bread the center of your French toast casserole will be more soggy in the middle.
  • Serve topped with fresh sliced fruit, cool whip or whipped cream, syrup, or powdered sugar. 
  • Want some extra flavor? Try adding: a small apple (diced), orange zest, diced pineapple, diced peaches, blueberries, chopped pecans, or almonds in with the bread.
  • MAKE IT AHEAD: This recipe does great with leaving it in the fridge overnight and baking in the morning so after you've added the topping, simply cover and place in fridge overnight. Then bake the next day.
