Pie Crust

First you’ll want to make your pie crust dough. Here’s how you do that. 1. Place flour, sugar and salt into the bowl of a food processor.

1. Pulse a few times to combine. 2. Add cold diced butter to the machine next. 3. Pulse the mixture until coarse crumbs form with some pea-sized pieces. then stop mixing.

1. Add ice water and pulse just until moist clumps or small balls form. 2. Press a piece of dough between your finger tips and if the dough sticks together, you have added enough water.

Transfer dough to a clean work surface, and gather dough together into a ball. Divide dough in half and flatten to form 2 disks. Refrigerate 1 hour before rolling out.

– 3-4 pounds apples (6-8) such as Golden Delicious, Cosmic Crisp, or Granny Smith – 1 tbsp fresh lemon juice – 3/4 cup sugar – 1/4 cup all-purpose flour – 1 tsp ground cinnamon – 1/2 tsp salt – 2 tbsp unsalted butter cut into small pieces – 1 tbsp water

Apple Pie Filling:

Peel, core, and cut apples into 1/4-inch-thick slices; halve crosswise, and add to bowl. Add sugar, flour, cinnamon, and salt to the apples; toss to combine.

Remove dough-lined pie plate from refrigerator. Fill with apple mixture, gently packing apples and mounding slightly in center; dot with butter.

Add top pie crust, pinching to seal top and bottom together. Brush top crust lightly with egg wash and sprinkle with a dusting of sugar for a beautiful crust. And bake until bubby and golden.
