Drain almost all of the water from the pot, leaving about 4 tablespoons in with the potatoes.
Add your cubed butter to the pot and cover with a lid for about 2-3 minutes or until the butter is melted.
Then, after they have cooled, put them in a large, freezer safe zip lock bag, label it and flatten the bag out so it will take up less space in your freezer.
When you are ready to heat, just thaw the bag overnight in the refrigerator. Once completely thawed, pour into an oven safe dish, cover, and heat at 375˚ for about 25 minutes, stirring occasionally.
