Easy Keto Chaffle Pizza

Equipment

Ingredients

  • 1 1/4 cups mozzarella cheese shredded & divided
  • 2 tbsp Parmesan cheese shredded
  • 2 large eggs
  • ¼ cup almond flour
  • 1 ½ tsp baking soda
  • ½ tsp garlic powder
  • ½ tsp garlic salt
  • 1 tbsp Italian seasonings
  • olive oil spray
  • ½ cup pepperoni
  • ½ cup sugar-free marinara sauce

Instructions

  • In a mixing bowl, beat egg until frothy, then beat in 1 cup mozzarella and 2 tablespoons Parmesan.
  • In a small mixing bowl, whisk together almond flour, baking soda, salt, and seasonings.
  • Add dry ingredients to egg mixture and mix until combined.
  • Preheat and generously grease waffle maker with olive oil.
  • Scoop in ¼ cup of batter into mini waffle maker (or 1 cup for Belgian style).
  • Cook batter for 3-4 minutes, while carefully pressing down on waffle maker.
  • Once cooked, top with ½ tablespoon marinara, then 1 tablespoon mozzarella, then a layer of pepperonis (about five).
  • Using a potholder, close waffle maker lid and press down slightly for 30 seconds.
  • Remove chaffle and repeat with remaining batter and toppings.
  • Serve while warm with remaining marinara for dipping.

Notes

Pizza Toppings on Keto - Almost all meats are fair game, provided that they don’t have sugar added or aren’t breaded. Many veggies and fruits are keto-friendly as well, just make sure to look up the carb content and ensure that you’re staying below your daily carb allowance for your diet.
Storing Chaffles - In the fridge, store in an airtight food container or bag for 3-5 days. For maximum crispiness, reheat in the oven or air-fryer after refrigerating.  In the freezer, place your frozen chaffles into a freezer bag with a piece of parchment paper between each one to ensure they don’t freeze together. You can reheat them in the microwave or oven!
Belgian Style - Prefer your chaffles to be a bit thicker? Use a whole cup of the batter in the waffle maker and enjoy them Belgian-style!
