I recently started making my own Homemade Sausage Patties recipe and they are the bomb-diggity!
Let me tell you why…
They have no mystery ingredients like MSG, high fructose corn syrup, and sodium nitrate, among other weird ingredients I have no idea what they are. They taste good, and I mean good! My kids even gobbled them up with no complaints – and that’s saying something. This homemade sausage patties recipe is one that I can make ahead of time and freeze, making it another freezer meals recipe to make my mornings easier and less stressful. Below is the recipe, I hope you enjoy it!
Homemade Sausage Patties Recipe
Ingredients:
2 lbs ground pork, at room temperature
1.25 lbs ground turkey, at room temperature
1/3 cup pureed or finely chopped onion (puree or chop first in blender or food processor).
2 tsp finely minced fresh parsley, or dried if you don’t have fresh
2 tsp fine Celtic sea salt –>find quality salt products here
1 tsp ground sage (affiliate link)
1/2 tsp dried thyme
1 tsp chili powder
1 tsp black pepper
1 tsp dried basil (affiliate link)
1 tsp dried oregano
2 teaspoons pure maple syrup (Buy it on Amazon)
1/2 tsp red pepper flakes, optional
Method:
To begin making this homemade sausage patties recipe you need to combine all the seasonings in a bowl and mix until well blended. Add in ground meat and onion, using your hands to combine thoroughly.
If cooking your homemade sausage patties recipe right away, shape into patties and cook over med-high heat on heavy skillet or griddle sprayed lightly with oil. Cook until nice and brown and no longer pink in the middle, a few minutes on each side.
Oh wait..what was I saying? Sorry this picture is making me drool and want to make and eat some more of this homemade sausage patties recipe. Okay back to the recipe… sorry about that. I get distracted easily.
To shape patties you can either use your hands or do what I did. Take some meat and place between two layers of plastic wrap. With a rolling pin roll out meat to desired thickness.
Remove top layer of plastic wrap. Take a round cookie cutter or top of a drinking glass, and press down to cut out nice round sausage patties.
Transfer to hot griddle to cook or baking sheet to be frozen.
To Freeze:
Shape and roll mixture into two logs about six inches long. Wrap in plastic wrap and freeze. To use, thaw and slice into patties with knife, then cook.
Or if you like, you can shape into patties, and layer them individually onto a parchment lined baking sheet and freeze. Then remove and add to a freezer safe gallon sized bag.
Make Ahead Homemade Sausage patties

Is it my math or is this a type-o? 2 1/4 lbs on meat has to make more than 6 patties. I’ll be halfing this and trying this recipe out tomorrow Sunday morning breakfast.

Great recipe! If I froze them as a 1/2 cm thick Pattie would I need to thaw to cook or could I get away with cooking from frozen ?!

I also like using store bought mild Italian sausage on pasta sauce and a variety of other dishes.
This has inspired me to try to make my own with ground pork. Do you have recipe for how to spice ground pork to taste like sausage?

For the best flavors and textures I like to freeze them raw and then cook on cooking day. But if you want to pre cook them first, you would cook, then cool, then freeze in a gallon freezer bag. Thaw in fridge overnight then heat on skillet until warm!

I would love to try these as i’m trying to live a healthier lifestyle but I can’t find Fine Celtic Sea Salt. Can I use Medatrainen fine sea salt or just fine sea salt in it’s place?

Any salt will do, even table salt. If you have fine celtic use it but if not, use regular table salt. 🙂

This may sound dumb. But when you cook up the frozen patties, what is your method of doing it?

I usually use a griddle, heat it up well and place sausage patties on top of it. Then cook on one side until its fully cooked and then flip it over to the other side until it’s cooked as well.

SO WONDERFUL! I have been wanting to make this recipe for awhile now and finally did. I tried mixing it in my food processor as I had dirtied it with the onion. That didn’t work too well (too much meat for my fp). So I transferred it to my KitchenAid mixer. I didn’t want to have dirty hands as my little one is napping and I may have to rush to get him. Also, I am lazy. Mixer worked well and they are FABULOUS! Of course my nearly 5-year-old doesn’t like them because I made them, but she will be tricked shortly because I am making your breakfast sandwiches and there is no way she could refuse those. 😉 We don’t eat pork so I made it with 2lbs ground chicken and 1.25ish lbs of ground beef. Also, I think, personally preference here, I will leave out the basil next time. The husband and I are not fans of anything remotely fennely/licoricey tasting. Oddly enough fresh basil is cool with us! Now you know my life story. It is payment for your wonderful recipe!

If your ground turkey doesn’t taste good and has that obvious “turkey” flavor, it is because the meat is not fresh. We raise our own turkeys and make sausage. After 6-10months in the freezer it starts tasting like store bought turkey. Before that people can’t believe it’s not pork.

thank you so much for this recipe, we moved and I have been on the search for round sausage patties that weren’t pre cooked, it seemed impossible and then I went hmm why not make your own, so bam found you and tired this recipe out, and its very good, and your tips for freezing are great, I have my batch currently freezing right now, only thing I would say is I will do half the amount of sage next time, I fried out a sausage round and found the sage to be a wee bit to much for me, but I am sure it will be ok once I have a breakfast sandwich made with a egg and cheese, thank again!

Re the freezing: you could freeze them for 30 to 45 minutes in the log (as you describe) then you would probably be able to slice them quite easily and finish the freezing. I think that would be faster than rolling out and more convenient than having to slice them when you want to cook. Haven’t tried these yet but they look scrumptious.

This is a must try for me. I have been working to eliminate processed foods from our menus for about 3 years now. Sausage is something we haven’t had in a long, long time. Can’t wait to try these & get sausage back on the menu. Bet they work great in any recipe calling for sausage crumbles too. I am already planning brunch for Sunday— sausage, potato, onion, & peppers hash, with eggs & homemade English muffin bread.
Oh & bet this recipe mixed with some rice would make awesome stuffed peppers.

Just picked up a 1/2 hog from a local farmer (fresh air, not confinement!!) I didn’t want the locker to make the sausage, so I have a lot of ground pork. This recipe was perfect!! I didn’t use the turkey, parsley, syrup but it was really great. Thank you.
