Wheat Thins are my favorite kind of cracker. I can go through half a box in one sitting, easy. This can often result in no wheat thins around when I really want some. To fix this problem I have an incredibly easy recipe to make your own crackers that in my opinion taste better than the store bought Wheat Thins and are made with real ingredients that I can actually pronounce. The recipe that I use has only a few simple ingredients; whole wheat flour, sugar/honey, salt, paprika, butter, water and vanilla. I love that I always have these ingredients on hand and they only take about 10 minutes to bake. I’ve only made a few varieties of homemade crackers and these near the top of the list. They are crispy and crunchy but slightly chewy in the center. The perfect cracker!
Make Your Own Crackers
First mix flour, sugar, salt and paprika to a bowl and whisk until well combined. Then with a knife or fork, cut butter into flour mixture until the mixture has a crumb like consistency.
It should look a little something like this.
Next mix together the water and vanilla (and honey if you’re not using sugar) and pour into the flour mixture. Using your hands mix the water into the flour until a dough in formed.
Split the dough in half and roll out each half on a floured piece of parchment paper. Roll out as thin and evenly as you can (about 1/16 inch). Use a pizza cutter and cut dough into desired shapes of your choosing ( I like the traditional shape of squares, but I’m pretty boring).
Lift up parchment paper and place on a 2 separate baking sheets.
Bake at 400 degrees for 8-12 minutes making sure to rotate the pan halfway through to ensure even cooking. Watch them closely because they can burn quickly.

They came out well and tasted like wheat thins. I used oil instead of butter because that’s all I had. I wasn’t sure when to add the additional salt. Is it before baking or after?

How long does this stay fresh if I put them into a ziplock bag?

There’s some air that will get through plastic bags, so they won’t last too long at room temp. – maybe 4-5 days? If you want them to last longer you can try to freeze them.

The nutrition facts state serving size is 1 cracker. Is this correct? If so, eating Nabisco’s wheat thins would be healthier. Nabisco has a serving size of 16 crackers per serving. Please advise.

Thanks for catching that. The recipe makes approximately 60 crackers and I broke it down into 10 servings of 6 crackers per serving.
