The cold can take it’s toll, but I have found a solution. Instant Pot Winter Warmth Soup!
Warm your bones, belly, and soul with this light, healthy Winter Warmth Soup. Can a soup be delicate and robust at the same time? If so…this soup is it! It has the healing powers of garlic, the green goodness of spinach, and loads of flavor without any real effort on your part.
The secret to this soup could be the love…or…maybe it’s the awesome seasoning packet that I used, which cut my prep time down considerably, and the flavor…Ooh! Sooo good!
I have included in this Instant Pot Winter Warmth Soup freezer meal recipe directions for Instant Pot AND Slow Cooker, because I know not everyone out there has an Instant Pot yet. This way you still can make this awesome delicious freezer meal!!
Instant Pot Winter Warmth Soup Freezer Meal
Ingredients
- 3 celery ribs diced
- 1/2 large onion pureed
- 2 lbs (1 kg) boneless skinless chicken breasts, cut into 1-inch chunks
- 1- 15 oz (480 mL) can diced tomatoes, with juices
- 12 oz (375 g) bag diced or sliced carrots, frozen
- 4 oz. (125 mL) frozen boxed spinach, partially thawed
- 2 tsp (10 mL) minced garlic (about 4 cloves)
- 32 oz. (1 L) chicken broth
- 1 Grill Mates Tomato Garlic & Basil Packet 1.06 oz.
Instructions
- Dice celery. Puree or dice onion. Set aside.
- Cut chicken into 1-inch chunks.
MAKE IT NOW
- INSTANT POT: Place celery, onion, chicken, tomatoes, carrots, spinach, garlic, chicken broth and tomato-basil seasoning packet into instant pot or pressure cooker. Stir gently until combined. Seal pressure cooker. Cook on manual (High) for 20 minutes. Let it naturally release, about 10 minutes. Ladle into bowls and serve.
- SLOW COOKER: To make in slow cooker instead of instant pot cook on LOW for 6-7 hours or on High for 3-4 hours, until chicken is tender.
MAKE IT A FREEZER MEAL
- Place celery, onion, chicken, tomatoes, carrots, spinach, garlic, chicken broth and tomato-basil seasoning packet in a labeled gallon size (4 L) freezer bag. Seal, removing as much air as possible, and freeze.
THAW AND COOK
- Place bag in the refrigerator for at least 12 hours or up to 24 hours to thaw or "Quick thaw" by running under water until meal can be broken apart.
- INSTANT POT: Transfer contents into instant pot or pressure cooker. Seal pressure cooker. Cook on manual (High) for 20 minutes. Let it naturally release, about 10 minutes. Ladle into bowls and serve.
- SLOW COOKER: To make in slow cooker instead of instant pot cook on LOW for 6-7 hours or on High for 3-4 hours, until chicken is tender.
