Food is just one of those things that can turn a frown upside-down.
It can save a gathering going sour or provide a bonding experience.
There are just so many ways in which food adds a positive aspect to life. You can use it to spend time with your kids, de-stress, as a gift, or even as a lesson.
I’ll just give you a moment as you think about how food is so mind-blowing. Anyways, the other day, I was craving a Philly Cheesesteak. It’s not the healthiest option and I usually feel like my stomach is going to kill me afterward.
However, I truly love the concept and taste of a Philly Cheesesteak so I brainstormed a better option. I came up with this Philly cheesesteak cauliflower tater tot casserole!
The name is a mouthful but it’s fitting because this casserole will have you hooked on stuffing your face with it. With three layers of gooey cheese and all the fixings of a Philly cheesesteak sandwich, you will never believe that this casserole is actually healthy. The pepper and onion are finely chopped to make it more kid-friendly and easier to hide. I personally wouldn’t mind the big chunks of pepper and onion but picky eaters call for compromises in our house. This casserole ended up being a hit in our home.
I barely got finished photographing it before the entire pan was devoured. Here’s the recipe—try it for yourself and see how long it lasts at your house.
Philly Cheesesteak Cauliflower Tater Tot Casserole
Making it couldn’t be easier. In fact, this is one of those meals the kids can prepare!
Begin by making your cauliflower tater tots.
(hopefully you’ve already made and frozen a bunch already!)
While the tater tots are baking, place your Philly steak in a skillet and cook it thoroughly.
Sprinkle with salt and pepper.
Next, chop your pepper and onion into large chunks and place it in the food processor.
Process it until it’s in finely chopped chunks. Don’t turn it to mush!
Place your pepper and onion in a skillet with your butter and sauté it for about 10 minutes.
Next, using a small casserole dish, line the bottom of the dish with your tater tots.
Place a layer of cheese on top of the tater tots, place your meat on top of the cheese.
Add another layer of cheese on top of the meat, place your onion and pepper mixture on top of the cheese.
End with one last layer of cheese.
Bake at 375 degrees for about 10-15 minutes.

Philly Cheesesteak Cauliflower Tater Tot Casserole
Ingredients
- 1 lb Philly Steak (usually thin sliced ribeye but any thin cut steak will do!)
- 1 Green Bell Pepper
- 1 Onion
- 12 slices Provolone Cheese
- 4 Cups (approx) Cauliflower Tater Tots
- 2 TBSP Butter
- Salt & Pepper to Season
Instructions

Is it Freezer Friendly?
This time I didn’t prepare this as a freezer meal… BUT, I see no reason you couldn’t cover your casserole before baking and freeze for later. To prepare, I’d let it thaw out overnight in the refrigerator, then bake the same as your instructions. Easy! Let me know if you try it!
