The Best Peach Cobbler Recipe ever. Great balance of flavors with a buttery crust, a sweet soft center and juicy tart peaches. It's Just like Andy's Cafe.

A few years ago I shared my favorite, and in my humble opinion The Best Peach Cobbler Recipe, here on happymoneysaver. It tastes just like the peach cobbler served at Andy’s Cafe for those who live in the Tri-City, (Pasco. Washington) area.We made it one night with my sister’s family and decided it was “website worthy”. So we took a quick picture (with not so great lighting) and posted the recipe. The pictures from that post did not do this recipe justice.  This recipe is so good and is one of our favorites so I thought I should update it with nicer pictures so as to tempt you into making it.

Time for a funny story. When I made this exact batch of peach cobbler, I had a friend come over and eat it with me. She agreed that it really was the best peach cobbler recipe and she took the remainder of it home to have for dessert later that night. She was so excited to have her kids and husband try it. The next day I asked her how they liked it and I couldn’t help but smile to her response. She looked down.. ashamed. Shocked I said, “Did they not like it?!!?” She gathered up enough courage to look me in the eyes and admitted that she had eaten 5 more servings throughout the day and only saved 1 serving for her husband. She then went on to tell me of the deepest desires of her heart… She hoped that he didn’t see it in the fridge because she very badly wanted that last piece for herself. I laughed so hard… but only because I have been there before…. really though, who hasn’t? That’s why dessert is so dangerous to have in my house.

I hope you enjoy the updated pictures and give this recipe a try. It only requires 6 ingredients and it is honestly better than any peach cobbler that I have ever had before. It has a perfect balance of flavors and is so simple yet so complex with the textures and flavors. I dont think I have ever had a more balanced dessert. It has a delicious buttery topping, a sweet center and ends with tarty peaches. I love topping it with homemade whipped cream. This peach cobbler is pretty amazing. You can see the updated pictures and read the previous post about this recipe below. Enjoy!

——————————————————————————————————————————————————————————————————————-

A couple weekends ago I was lucky enough to spend some time with my sisters. I don’t know about your family, but when we get together there is lots of laughter, lots of games, and great food! Don’t all family gatherings revolve around food? Somehow we started to talk about a great little cafe in Pasco called Andy’s Cafe, I think the official name is Andy’s Coffee Break. It’s an old cafe – where I am sure they have a lot of “regulars” coming because they know how great the food is.

Have you ever tried their peach cobbler? It is so delish and quite different from any peach cobbler I have eaten.  Well, about an hour into a very intense game of Settlers, {Yes.. I am a nerd. Deal with it.} my sisters and I started talking about Andy’s and how good their peach cobbler is.  That is when my sister Ashleigh decides to inform us that she can make it.  That all these years she has had a copycat recipe, if you will, of Andy’s Peach Cobbler. And the best part was how easy it was!  I’m still a little irritated that she kept this recipe all to herself and why she didn’t share it sooner.  In spite of her, I thought I would share it with all of you!

Mix well and then add in milk. Batter should resemble pancake batter, so if 1 cup of milk doesn’t do it, slowly add more until it reaches the right consistency.

Next add peaches on top of the batter.

Put pan in the oven for 1 hour and watch the magic happen. The batter bakes up over the top of the peaches and has the most amazing buttery flavor.

Break into that deliciousness right away. I love how some of my pictures captured the steam escaping after cutting it open. Yum!

I added nutmeg to mine. I had never made peach cobbler without nutmeg so I added it. Some old habits are hard to break. Lol. I also used coconut sugar just because that’s what I bake with. Need to cut them calories whenever possible. Peach cobbler was amazing. My son requested PC for his birthday, so I tried a new recipe. Gutsy move. Mom scored. I have a happy 29 year old.

This is the exact favorite recipe I have been using for over 40 years! A realtor gave it to me. I use whatever fresh fruit is available;cherries, boysenberry, apricot. So delicious!
It freezes well too. Baked or unbaked.
    Thank you for sharing.
