Frugal Food: Fancy Chicken Spaghetti

Meal #3: Fancy Chicken Spaghetti.

This meal is part of a series of meals I make out of one roasted chicken.

and Read Meal #2 Chicken Fried Rice

This is no ordinary spaghetti…it’s like a little plate of pasta heaven. It’s light and so very flavorful. (Now don’t you go and add hamburger to this or I will hurt you…its for CHICKEN people…get over it.)

Ingredients:

1 package of spaghetti or angel hair pasta
1-2 chicken breasts (or use leftover roasted chicken)
1 TBL olive oil
1 clove garlic
1 TBL Basil

2 -15 oz. cans diced tomatoes with juices (I like petite diced personally)
1 tsp. oregano
1 tsp. basil
1 clove garlic
I can artichoke hearts drained & diced
1 can olives drained.
Salt and pepper to taste

Directions:

Start your pot of boiling water and add your noodles. While that is cooking….

Get our your frying pan and add the olive oil, chicken, 1 clove garlic and 1 Tbsp basil. If your chicken is from leftovers, just cook it for 1-2 minutes, otherwise if fresh chicken make sure and cook until your chicken is no longer pink.

Then add the remaining ingredients: artichokes, tomatoes, olives, more basil, oregano and yes..more garlic. Bring to boil and let simmer until pasta is done. Toss with pasta and add some fresh parmesan (or the sprinkle stuff is okay too…).
