It finally happened in my family. Something I never thought would occur. But yes, sadly yes, one of my kids was tested and found allergic to wheat! Wheat people, wheat! The staff of life! So sad.
So I have been trying my best to try and make some gluten-free meals lately, which is NOT an easy task. But I’m determined to create some new and amazing gluten free meals as the months go on. One super easy one I’m making these days is gluten free breakfast sandwiches. Here’s the recipe!
Make Ahead Freezer Friendly Gluten Free Breakfast Sandwiches
Ingredients:
- 1 package gluten free flaxseed English muffins
- 4 slices cheddar cheese
- 10 eggs
- 1/3 cup milk
- pinch of salt
- pepper
Preheat oven to 375. Whisk eggs, milk, salt, and pepper in a bowl.
Spray an 8×8 square pan with nonstick, then pour eggs in. Bake for 20-25 minutes.
After baking, turn egg sheet out onto a cutting board, and use a circular cutter to make circles. (I used a mason jar lid).
Build your sandwiches: Bread, egg, cheese, bread.
Wrap in plastic and freeze.

I have used whoopie pie pans for the eggs and baked the eggs in the oven. They fit on an English muffin perfectly!

Why not cut the egg mix, square…same as the cheese…no leftover bits…just saying.

I have been buying the Jimmy Deans version of these (which include sausage and are on a croissant). They say to put into the microwave for 90 seconds at 30% power (1100 Watt microwave) and then turn over the sandwich and microwave for an additional 50 seconds at full power. I am going to try this recipe so I can save some money and stock up my freezer. Thanks for all of the recipes. 🙂

I’ve made these and really love them! I just put in the microwave as we are typically in a hurry but you could place in a warm oven for a few minutes as well. I’m not sure how long as they are frozen.
