- 2 chicken breasts
- 1 cup flour
- 1 tsp salt
- 1 tsp pepper
- 2 eggs
- 1 cup Italian style panko bread crumbs (whole wheat or plain panko will work, too)

Preheat the oven to 350 degrees. Cut chicken breasts into equal sized strips.
Take 3 bowls and in 1 bowl add flour, salt, and pepper. Mix well.
In another bowl beat 2 eggs.
In the third bowl add 1 cup Italian style Panko bread crumbs.
Dip each piece of chicken in flour, then egg, and lastly panko bread crumbs.
Place chicken strips on a greased or parchment covered baking sheet.
Bake for 20-25 minutes or until cooked through. Turn chicken strips halfway through cooking to ensure even cooking and crispiness.
Serve with ranch, BBQ sauce or your favorite dipping sauce.

I only have frozen chicken breast. Is it safe to draw them, and then refreeze with out cooking them first? Or should I bake them then freeze them?

Thaw them out safely in the fridge, and then you should be able to freeze it in the recipe. I do it all the time!

I notice that under the subheadline “Can I cook from Frozen”, the text says put in oven at 450F for 30-35 mins. However in the instruction NOTE for cooking from frozen, you have listed the temp is 350F for 30-35 mins. We went with our gut and baked at 350F for 35 mins and results were great! Thanks for this recipe – much happier with a healthy option.
