Recipe: Coconut French Toast

These little babies are heavenly. If you are looking for a recipe this weekend to impress your company..this is the one for you. Seriously, there are no words that can describe how delicious these are.  Once when I was traveling, I stopped at a local breakfast cafe where they offered something like this on the menu. I was intrigued and tried it. That was the first day of my love affair with coconut french toast.

After scouring the internet for recipes, I ended up tweaking a recipe I found on Our Best Bites.  After a few trials I perfected it..and just about everyone in our family LOVES them!!

Coconut French Toast:

Here are the Ingredients:
2 eggs, beaten
2 ½ Tbsp. sugar
½ tsp. salt
½ tsp. coconut extract
2 c. milk
1 c. flour
2 ½ tsp. baking powder
Texas- style toast (normal works but Texas is better) cut in half diagonally
1 Cup Shredded Coconut
1/2 cup unsweetened coconut
vegetable oil

Directions: In a large skillet or frying pan heat about 1/4 inch of vegetable oil over medium heat. (if you add a drop of water it should sizzle, then its ready).

Mix your beaten eggs, sugar, salt, coconut extract, milk, flour, baking powder and $1/4 cup of the unsweetened coconut together in a pie pan or bowl.    On a separate plate or pie plate add the sweetened and unsweetened coconut, mix it together.

Quickly dip your bread on both sides in the egg/flour mixture. Then dip both sides in coconut. Add to skillet. Cook until it’s golden brown on both sides (probably around 1-2 minutes each side). You will want to watch these closely so they do not burn. When they are done, just remove them from the oil and place on a paper towel.

Add butter + syrup or powdered sugar and cool whip! Golly, these are just perfect. Slightly crispy, yet soft inside and that coconut flavor is amazing!!
