There aren’t a lot of foods that my kids actually beg for, but cinnamon rolls are one of those things! Traditionally, it’s a breakfast item, so as a very rare treat I would set my alarm for 6:00am to start the long process of making cinnamon rolls. Now that school is starting up again I realized I needed to find a better way to give my kids what they wanted on a daily basis without me waking up before the sun rises to accomplish it.
That’s when I created these simple Cinnamon Roll Overnight Oats. It has that yummy cinnamon goodness that all kids crave, takes little work (unlike fresh baked cinnamon rolls), and the best part is I feel like I still get the points as a mom for the cinnamon rolls without actually having to do the hard work. Every mom should have this recipe in their back pocket.
Cinnamon Roll Overnight Oats
Start out with a container of your choice. I always use a mason jar because I always have them on hand and I feel kind of special eating my breakfast out of it!
Add the vanilla protein powder, brown sugar, cinnamon, vanilla Greek yogurt, milk, vanilla and a pinch of salt to bring out the flavor. Mix that together.
Pour in the Quaker® Old Fashioned Oats into the liquid mixture and mix until it is well combined.
Put the container in the refrigerator overnight so the cinnamon and brown sugar can melt into the Quaker® Oats.
Cinnamon Roll Frosting Topping
To get that authentic cinnamon roll taste you have to have the frosting! This could be left off but I think it’s the perfect swirl of flavor into the cinnamon oatmeal. It’s so easy to make, too!
Combine softened cream cheese, cinnamon, powdered sugar and milk in a small bowl until well mixed. Store it in a resealable bag in the refrigerator.
In the morning if you are feeling fancy, add the frosting into a piping bag. If you aren’t, cut a corner of the resealable bag to mimic the look!
Pipe a swirl of the tangy frosting on the top of the creamy cinnamon oatmeal.
I love this cinnamon oatmeal breakfast because it can be eaten cold straight from the refrigerator or warmed up to recreate the taste (and smells!) of a classic cinnamon roll. What more could a family want?

Another recipe besides these simple Cinnamon Roll Overnight Oats that I make is my Pumpkin Pecan Crumble Overnight Oats. While pumpkin puree dances with the tones of cinnamon and cloves, the creaminess of the oats balances out the brown sugar pecan crumble. Enjoy!

Delicious! I skipped the protein powder and used vanilla almond milk. I also added chia seeds. The cream cheese frosting could be left off to save time/calories but it was good. Will definitely make again!

This oatmeal is soooo good!! My only criticism is next time I’m going to only put a pinch of cinnamon in the cream cheese topping. I love cinnamon, but this has just a bit too much.
