Baked blueberry oatmeal is one of my go-to comfort foods. It’s so delicious. I serve it with fresh cream drizzled on top. This stuff will make your house smell amazing as it bakes, and with its sweet and slightly crunchy outside and the softer inside it pretty much destroys regular old fashioned mushy oatmeal.
Adding fruit to oatmeal always fancies it up and gives that bit of tart to balance out the sweetness. It is so good! I beg you to try this recipe at your next brunch or breakfast gathering. You will gather oooh’s and ahhhh’s when they try baked blueberry oatmeal for the first time. It’s heavenly.
You just need to make it once, please. But I warn you, making it once may turn into a weekly occurrence. It could be dangerous.
Baked Blueberry Oatmeal
Ingredients:
6 cups old fashioned oats
4 tsp baking powder
1 1/2 tsp fine sea salt (buy my favorite kind on Amazon here)
1 tsp cinnamon
1/2 tsp nutmeg
dried fruits or nuts-optional
4 eggs
2 cups milk
1/2 cup coconut oil (buy quality oils here)
1/2 cup brown sugar
1/2 cup honey
1 tsp vanilla extract
1/2 cup fresh or frozen blueberries
Method:
In a large bowl mix oats, baking powder, salt, cinnamon and nutmeg. Optional- Add in dried fruits and nuts. Set aside.
In a separate bowl mix the eggs, milk, melted coconut oil (melt it in the microwave), brown sugar, honey, and vanilla extract.
The coconut oil with harden up when it hits the wet ingredients. It should look a little like this. Fear not… this is normal.
Pour the wet ingredients into the dry ingredients and stir until well combined.
Gently stir in blueberries.
Pour into a greased 2 qt. baking dish or 8×8 baking dish.
Bake for 30 minutes at 350 degrees. Remove from oven. Serve hot with fresh cream or milk.

* This recipe is very forgiving. You can add in nuts, dried fruit or other fresh or frozen fruits of your choosing. We love blueberries and so that’s what we make most often. I have also left out the nutmeg and just increased the cinnamon. One time I only had 1/4 cup of honey so I did 1/4 cup honey and 1/4 cup molasses. It was amazing. Get creative, who knows what amazing concoction you will discover.

My family loves this recipe! We call it the chunky monkey oatmeal. I replace the brown sugar with two bananas, butter for coconut oil and we use whatever nuts we have and top with mini chocolate chips! Warmed up with milk is our go to.

YUM! This is very similar to a recipe I use. I bake in a muffin tin and substitute blueberries for Triple Berry Blend {frozen, from Costco). You can freeze the individual oatmeal “cakes” and warm them in the microwave when needed. LOVE them!

I made this for a brunch potluck at work and was really worried since I had never made it. Turned out, everyone loved it! Not to mention it was different and for the most part healthy. I don’t cook a lot, so when you say, “serve with fresh cream”, I didn’t have to do anything to the cream did I? I just bought some from Kroger in a carton…

I haven’t tried leaving out the brown sugar for this recipe. It might not be sweet enough unless your blueberries are extremely flavorful. If you try it out let me know what you think!
