I love a good pasta salad.
Especially in the summertime, when it’s brutally hot and humid out, and the last thing I’m thinking of is turning on my oven.
In the end, no matter the weather, I still have a family to feed, and what I make them has to be full of protein, carbs for energy, good fats, and all that other stuff that makes them develop and grow and stuff.
This simple pasta salad recipe came to me after eating an amazing sandwich a few weeks ago. I don’t know how or why the idea to turn a sandwich into a pasta salad popped in my head, but I rolled with it. And man, am I glad I did!
This California Club Pasta Salad has made me a hero in my home!
It’s ridiculously simple to throw together – crumble some bacon, chop some veggies, cube some cheese. The most labor intensive part is shredding the rotisserie chicken.
Unless you count carrying the pasta pot to the sink to drain it as hard.
It’s completely no-cook, also (aside from the pasta), unless you roast your own chicken. I usually just pick one up from my local deli this time of year. The less I can heat up my house, the better.
Bring it all together in a big bowl, toss in some of the best darn ranch dressing on the planet, season it with some salt, pepper, and garlic powder (if you want to – it’s just as nice without!), and in 30 minutes, I can have this beautiful California Club Pasta Salad on the table and ready to devour. 30 MINUTES. That leaves me plenty of time to get more done around the house.
And if you know me, you know what that schedule is like! You know that I love my freezer meals for freeing me up, and I love this salad just as much!

California Club Pasta Salad
Ingredients
- 1 box rotini pasta 16oz.
- 1/2 deli rotisserie chicken shredded
- 1 avocado cubed
- 1/2 cup romaine lettuce shredded
- 1 cup grape tomatoes halved
- 6 slices bacon crumbled
- 1/2 cup cheddar cheese cubed
- 1/2 cup Swiss cheese cubed
- 1 1/2 cups ranch dressing
- Salt & pepper to taste
- Garlic powder to taste
Instructions
- Boil your pasta, then combine all ingredients in a large bowl and toss with salad tongs to combine.
- Serve and enjoy!
