What Goes Into One Of These Breakfast Sandwiches?
Lucky for you, this recipe doesn’t call for a laundry list of ingredients. Just a few simple ingredients and spices, most of which you likely already have on hand, and you’re on your way to a convenient grab and go breakfast option your whole family will love!
You’ll need:
- Ground pork
- Salt, pepper and thyme
- Eggs
- American cheese slices
- English muffins (preferably the Orowheat extra crisp ones)
- Cooking spray
How Do You Make These Freezer Breakfast Sandwiches?
From beginning to end, making these breakfast sandwiches is a surprisingly simple process. Just one batch cooking session and you can kiss making breakfast on a daily goodbye for the next week!
- Start by mixing together your sausage patty ingredients. Mix together the ground pork, onion salt, salt, pepper, sage, thyme and sugar in a medium bowl until well combined.
- Form them into 6 large and thin patties (about 4-5 inches in diameter and ¼-½ inch thick). You can certainly shape them with your hand, but I’ve come up with an easy way to form the patties.
- Take the meat, place it between two layers of plastic wrap and then use a rolling pin to roll the meat out to the desired thickness. Remove the top layer of plastic wrap then use a round cookie cutter (or the top of a drinking glass) to press down and cut out perfectly round sausage patties.
- Place the freshly formed sausage patties on a baking sheet and put them in the freezer for about 30 minutes. This makes transferring the sausage to the skillet with a spatula much easier as it will keep its shape.
- Cook the sausage patties over medium-high heat on a heavy skillet or a griddle that has been lightly sprayed with oil. Cook them until they are nice and brown with no pink in the middle (about 3-4 minutes on each side).
- Now preheat your oven to 350 degrees while you prepare the egg patties.
- Lightly spray cooking spray into each silicone spot or lid. Add one large egg to each spot. I like to break my egg yolks so the patty lies flat in the sandwich, but that’s just personal preference.
- Place the pan of eggs into the preheated oven and cook them for 12-15 minutes (or until the egg is solid and cooked through). Once they’re cooked, remove them from the oven and allow them to cool for a couple of minutes before removing them from the pan or lids.
- Using the same cooking cutter or top of a drinking glass you used for the sausage patties, cut out circles from each cheese slice.
- Then assemble your sandwich by placing them in this order: Bottom of muffin, cooked sausage patty, egg, cheese and top of muffin.
How To Make Perfectly Formed Egg Patties
There are a few different ways to make perfectly formed egg patties:
- I found a silicone tray on Amazon that works great for this. Just make sure to place it on a baking sheet for added stability.
- You could also go the less expensive route and use wide mouth jar lids. I’ve only tested this with Kerr’s Sure Tight wide mouth lids with bands, so use other lids at your own risk. They run about $6 for a 12 pack and they sell them in the canning section of most stores. Simply place the bands into a baking pan, place the lid with the rubber seal part facing down (away from the eggs) and you have your own little mini tart pans!
Enjoy Them Now
Just because this is a recipe for freezer breakfast sandwiches doesn’t mean you can’t enjoy them right away! If you want to enjoy one after preparing them, simply wrap the sandwiches in tin foil and heat them in the oven for about 3-5 minutes. You can also microwave them (with no foil, of course) for 30 seconds or until the cheese has melted.
Make It A Freezer Meal
The process for freezing these delicious homemade breakfast sandwiches is super simple. Just follow these steps to have a great make ahead breakfast option for the whole family!
- Let all the sausage and eggs cool to room temperature.
- If you are making these to quickly microwave from frozen, take 6 pieces of paper towels, get them wet and wring them out well so they are slightly damp. Wrap each sandwich tightly with a damp paper towel.
- Then either wrap them in plastic wrap or place individually in small pint sized freezer safe bags >>> my favorite resealable bags are here! Then place them all in a gallon sized freezer safe bag, seal them then freeze.
- You can freeze these make ahead breakfast sandwiches for up to one month.
- If you want to use these for over a campfire, tightly wrap each in heavy duty or non-stick aluminum foil then place into a gallon sized freezer safe bag. Seal bag and freeze.
How To Reheat These From Frozen
How Do You Microwave A Frozen Breakfast Sandwich?
- To reheat in the microwave, remove the plastic wrap but leave the sandwich loosely wrapped in the paper towel.
- Microwave on High for 1 minute, flip sandwich over and cook for an additional 1 minute.
- Let stand for 2 minutes. Remove the paper towel and enjoy.
How Do You Bake A Frozen Breakfast Sandwich?
- To reheat in the oven, place sandwiches (still wrapped in foil) in a 350° F oven for about 25-30 minutes, flipping once halfway through the cooking time.
Reheat Them Over A Campfire
- Over a campfire, place a grate over a nice 1-2 inch layer of hot white coals. If you are using briquettes, light them and wait about 10 minutes until they are not flaming and starting to turn white.
- Place your thawed foil wrapped sandwiches on the hot grill to cook, turning every 5 minutes until heated all the way through (about 20-25 minutes).
- If the sandwiches are still frozen, it will take closer to 35-45 minutes.

- Crack. You can easily crack your eggs by gently hitting them with a butter knife once.
- Egg Yolk. To make the egg flat for sandwich assembly, pierce the egg yolk with a fork before baking.
- Test. Make sure to test the eggs by using a toothpick or by touching the tops as it can sometimes look like they aren’t done when they really are, and you really don’t want to overbake your eggs.
- Knife. The eggs should come out pretty easily, but if one sticks a little, just use a butter knife to gently go around the edges and it should release just fine.

Sausage McMuffin Make Ahead Breakfast Sandwich
Ingredients
- 1 lb ground pork
- 1 tsp onion salt
- 1 tsp salt
- ½ tsp pepper
- ½ tsp sage
- ¼ tsp thyme
- ¼ tsp sugar
- 6 large eggs
- 6 slices American cheese
- 6 English muffins prefer the Oroweat extra crisp ones…
- cooking spray
- Additional salt and pepper to taste
Instructions
Sausage Patties
- Mix together the ground pork, onion salt, salt, pepper, sage, thyme and sugar in a medium bowl until well combined.
- Make 6 large and thin patties 4-5 inches across in diameter and ¼-½ inch thick (sausage patties will shrink when cooking, so make sure they are bigger round than than the English muffin size and thin.
- To shape patties you can either use your hands or take meat and place between two layers of plastic wrap. With a rolling pin roll out meat to desired thickness. Remove top layer of plastic wrap. Take a round cookie cutter or top of a drinking glass, and press down to cut out nice round sausage patties.
- Then place baking sheet in freezer for 30 minutes so when you transfer the sausage to the skillet using a spatula it will stay in it’s shape.
- Cook over med-high heat on heavy skillet or griddle sprayed lightly with oil. Cook until nice and brown and no longer pink in the middle, 3-4 minutes on each side.
Egg Patties
- Preheat oven to 350 degrees. Use a silicone tray or use wide mouth lids with bands. Place the bands into a baking pan. Then place the lid with the rubber seal part down (not touching the eggs).
- Optional: Add a piece of parchment underneath the lids for quick clean-up.
- Spray cooking spray into each silicone spot or lid. Add one large egg to each spot. I prefer to break my egg yolk so the whole patty lies flat in the sandwich but it’s optional. Break egg using a butter knife gently once. Sprinkle each cup with a little salt and pepper.
- Bake at 350 degrees for 12 to 15 mins or until egg is solid and cooked through. Make sure and use a tester or touch the tops as sometimes it looks like it’s not done when really it is, looks can be deceiving and you don’t want to overbake your eggs.
- Remove from oven and let cool 2 minutes before removing from pan or lids. They should come out beautifully, but if you have one sticking a little, just use a butter knife to gently go around the edges first.
- Cut out circles from each cheese slice using a round cookie cutter or top of a drinking glass.
- Assemble your sandwich by placing them in this order. Bottom of muffin, cooked sausage patty, egg, cheese and top of muffin.
Make it Now
- If eating immediately, wrap each sandwich in foil. Place the foil-wrapped sandwiches in the oven directly on the middle rack and bake for about 3-5 minutes at 350 degrees. Or warm quickly in the microwave with no foil for 30 seconds until cheese is melted.
Make it a Freezer Meal
- Let all the sausage and eggs cool to room temperature.
- If you are making these to quickly microwave from frozen, first take 6 pieces of paper towels, get them wet and wring out well so they are slightly damp. Wrap each sandwich tightly with a damp paper towel. Then either wrap in plastic wrap or place individually in small pint sized freezer safe bags or add several into a large gallon sized freezer safe bag.
- Seal bag and freeze.
- If you want to use these for over a campfire or warm in the oven later, tightly wrap each in heavy duty or non-stick aluminum foil then place into gallon sized freezer safe bag. Seal bag and freeze.
Reheat from Frozen
- To reheat in microwave remove plastic wrap but leave the sandwich loosely in the paper towel. Microwave on High for 1 minute, flip sandwich over and cook an additional 1 minute. Let stand for 2 minutes. Remove the paper towel and enjoy.
- To bake from frozen in the oven, place sandwiches (wrapped in foil) in 350° F oven for about 25-30 minutes, flipping over once halfway until heated all the way through.
- Over a campfire place a grate over a nice 1-2 inch layer of hot & ready white coals. If you are using briquettes, light them and wait about 10 minutes until they are not flaming and starting to turn white. Place your thawed foil wrapped sandwiches on the hot grill and cook, turning every 5 minutes until heated all the way through, about 20-25 minutes. If sandwiches are still frozen it will take 35-45 minutes turning every 5 minutes.

I make these all the time. I use the frozen sausage patties from Walmart. Works perfectly with English muffins. I then wrap them in paper towels. because they are frozen the towels get wet while thawing. It helps to keep the muffin from getting hard. My favorite is egg, sausage, bacon and provolone cheese.

I made these yesterday. Great recipe. I have a couple of tips. Eggs- I cook mine in muffin top/Whoopi pie pans. They work very well that way. Sausage- Even though I made my patties large and thin, they sort of pouched up in the middle as they cooked and shrank. I think a panini press might help with this issue, but I am going to try cooking them in my George Forman grill (cooks top and bottom simultaneously) next time.

Try making an indentation in the center of each pattie with your finger. That should keep them from cupping while they cook.

Quick and easy recipe, however the ground mince did not stay in place even after 30 mins in freezer. Very tasty, will defiantly try again.
