I love me some freezer meal cooking, it is a lifeline for me in many ways. Keeps me sane. Usually when thinking of freezer meals, we think of dinners, but today I am sharing my Freezer Meal Breakfast Sandwiches. These Sausage, Egg and Cheese Biscuits are made ahead of time, wrapped in plastic wrap and placed in a freezer safe Ziploc bag. For a nice quick morning, just grab a sandwich, remove plastic wrap and place in the microwave for 60-90 seconds. It has been so nice for my husband to have a hearty breakfast that he can grab and heat up as he is heading out the door for work in the morning. My kids love them too and think it is a special treat when they get one. “Anything’s better than cereal…” they whine.
Sausage Egg and Cheese Biscuits Freezer Meal Breakfast Sandwiches
These sandwiches are very simple to make. First you will want to make a batch of your favorite biscuits. You can make a batch of my great grandmothers vintage buttermilk biscuits that are perfectly soft and flaky or I have found a really wonderful biscuit recipe that turns out every time over at orgasmic chef. Oh dear, I think I’m blushing.
Next pull out some of my homemade sausage patties and cook em’ up.
I used a little ramekin dish for my eggs. I sprayed the dish, cracked one egg and scrambled it up adding salt and pepper.
Cooked that in the microwave for about 45 seconds and I had the perfect little egg patties.
I used cheddar cheese and cut each slice in half diagonally.
Lastly, cut the biscuit in half and stack the sausage, egg and cheese and top it with the other half of the biscuit to form the breakfast sandwich. Ooooo! Ahhh! Is your mouth watering yet? Mine is.
Let the sandwiches cool to room temperature before wrapping in plastic wrap and placing in a freezer safe bag.
Place bag in freezer, removing as much air as you can. When ready to eat, pop in the microwave for 60-90 seconds or until heated through.

I freeze mine and after they are frozen solid I then vacuum seal 2 per bag (just two of us).

Are you cooling off or flash freezing the egg/sausage part before you make your sandwiches up? Seems if it was all made up with hot ingredients that the biscuits would get soggy before the entire sandwich cooled down. Also are you flash freezing the entire sandwich before you individually wrap up? Thanks

If don’t have time for homemade biscuits, I wonder if you could make freezer ones then make sandwiches, but you’d have to refreeze. I do breakfast burritos for my hubby for work but these sandwiches would be a great alternative. Finding your site has been so awesome for me so far in doing make ahead meals. Yum too!

I am not sure exactly of the cost because most of it is homemade BUT it is definitely cheaper than buying one from a certain fast food chain! 🙂

The total cost would be what ever kind of sausage you get and the kind of eggs you get and the kind of Biscuits you get what I mean is it can be expensive or it can be cheaper.

How long can these stay in the freezer before they will not be good anymore?

Foods can stay frozen without getting spoiled as no bacteria can grow when frozen, so they wont go bad in that sense. The longer food is frozen it loses its taste and quality. Usually I like to use things like this up within 4-6 months. Great question!

I am just now getting into freezer meals and such. I’ve read alot about eggs and cheese not being good to freeze. Any word on that?
Also slightly not on THIS recipe topic, but I am using a couple of your crock pot freezer meals …. Can you put the ingredients in frozen or do they need to be thawed? Like, the bagged ones, with all ingredients in the bag.

Freezer meals are just so much fun! So you can freeze eggs – here is my post on that (https://happymoneysaver.com/can-you-freeze-eggs/). Cheese that is shredded can be frozen but if you freeze cheddar in the block it will crumble when thawed.
As for adding ingredients frozen – YES, YES YES! I do it all the time. Its usually a little better if you thaw first, but I am always such a last minute person that I forget and then add frozen to the slow cooker and give it more time. Have fun doing freezer meals!

You can definitely pre-cook them before freezing them. I prefer to cook them once fresh. It keeps the sausage crispy and the flavor is incredible.

Thanks for your sausage, egg, and cheese recipe. I also like your homemade sausage recipe. It sounds like you make the sausage and then freeze it until you are ready to make the sandwich. Then you take the sausage patty out of the freezer and cook it and make the sandwich and then put back into the freezer again until ready to eat. I this correct? Freezing the meat twice is okay? I’ve never done this before. Thanks!

Yes, freezing the meat twice is okay. When you make the sausages they are not cooked. It is raw meat combined with other ingredients and then frozen. To make the sandwiches you cook the sausages and then you freeze them again in the sandwich. The meat is always at a safe temperature. 🙂

I started making sausage and egg biscuits (sometimes with cheese) a few years ago because I am not a morning person but wanted my kids to have a decent breakfast. I use the refrigerated biscuits–the big thick ones–they are just the right size. For my eggs, I have a recipe for Scrambled Eggs for a Crowd and it bakes up a large sheet cake pan that I just cut into squares and put into the biscuits with the sausage. That makes them so much easier. My daughter, especially, loved these and during her soccer season, it was a mainstay!

I have been making my own breakfast sandwiches for about a couple of years now. One thing that I do after I wrap the sandwich up in plastic wrap is to re-use the plastic bags that bagels came in since it is a perfect fit for the sandwiches and i use my vacuum sealer to take out the air but tape it shut instead of using the heat to seal it. Another thing that I have done is to place then in a freezer bag on the end starting in the corner and doing the same with the rest, I have found that you can fit more in a freezer bag and it uses up more space which does not take as long to vacuum out all of the air.

It depends on which recipe. If it was my Grandma’s Buttermilk Biscuits it makes about 8 biscuits. The other recipe it makes 12. But a lot of it is up to how thick you roll the dough and how big of a biscuit cutter you use. 🙂

Thank you for this recipe. I’ve been stubbornly not serving my children cold, boxed cereal for breakfast because they end up hungry 45 minutes later on that fare. So, I always cook breakfast, whether porridge or eggs or muffins. The kids can last until lunch with a hearty breakfast, but the process of cooking, eating, and cleaning up takes up a lot of my morning. So, I’m going to make these, and your sausage too. Hey – to make the scrambled egg part for these sandwiches, try this to keep you from having to fuss over one ramekin at a time: Mix up your scrambled egg mixture (eggs, S&P). Now, spritz your muffin tin with cooking spray. Ladle 1/4 cup egg mixture into each muffin cup. Drizzle a couple of tsp cream or half & half over each egg (prevents top dryness). Bake at (preheated) 325 degree F oven for about 20 min. Loosen edges with a butter knife & they lift right out, the right shape for your biscuits! … I’m going to use your breakfast burrito idea too.
