This is a recipe that my family will eat a couple times per month. We had it last night for dinner in fact. 🙂
Total Cost for this Meal:
At Save-A-Lot I bought some bags of brown rice for .79 per bag. I used half a bag for my family = .40
The Chicken was bought at Albertsons for $1.88 lb -I used 1.5 lbs = $2.82
The Can of Pineapple was .79 at Winco — all other ingredients I just always have on hand.
Total cost= $4.01 for my family of 6 for dinner!
This is one of my thrifty weeknight meals. Enjoy 🙂
Honey Lime Chicken Recipe
Ingredients
- 4 Chicken Breasts cut into strips
- 1 1/2 tsp garlic salt
- 1 tbsp Oil
- 20 oz can pineapple tidbits keep the juice!
- 1/4 cup honey
- 3 tbsp Lime juice
- 2 tbsp Soy Sauce
- 2 tsp Corn starch
Instructions
- Cut the chicken into strips or bite sized pieces and sprinkle with garlic salt.
- Heat oil in a skillet over med-high and add chicken.
- Cook chicken until golden brown.
- Drain the pineapple, keeping the juices.
- Add 1/4 cup of the pineapple juice to the skillet.
- Cover and simmer 6-8 minutes.
- Remove the chicken from the pan.
- Add honey, lime juice, soy sauce, cornstarch and remainder of pineapple juice to the pan.
- Bring to a boil stirring constantly.
- Cook and stir until thick and clear, about one minute.
- Add chicken and pineapple tidbits last and heat through.
- Serve over hot rice and it's cool to garnish with lime wedges or Chow Mein noodles.
- To freeze this recipe, cook it all up as directed above. Then let it cool, and add it to a gallon size freezer bag. Label and freeze. Then warm it up and serve with fresh hot rice.

Hello Kim, I would say each recipe would feed around 4-6 people depending on how big of portions you have. Each recipe feeds my family for the dinner and sometimes leftovers and there are 6 in my family. My husband and I, two 13 year olds, an 8 year old and a 6 year old.

Sounds and looks fabulous! Love the real life pics too! Could you please describe how exactly you reheat your frozen meals? You take the ziploc baggies out of the freezer and then…how are you reheating? Any special method for certain meats? Thanks a bunch!!

Hello Chastity, Usually I take out the frozen ziploc in the morning and put it in the fridge to thaw all day. Then at night I make some rice, and add the honey lime chicken to a wok or larger frying pan and reheat for a few minutes till warm. 🙂

This is a great idea. The recipes sound lovely. Thank you for sharing. But can I ask… Do you give your family some fresh greens and veg with their meals because it wouldn’t be too healthily only eating the meat and rice etc? I guess some frozen beans and peas etc would be ok with the meal.

Yes, we either use canned green beans, or corn, frozen vegetables or make a salad usually with every meal. 🙂

I cook it all up, let it cool a few minutes, add to freezer bag and freeze. Then we just reheat it up and serve over rice another day.

Yep, just thaw it in the fridge and heat it up on the stove top! 🙂

FANTASTIC recipe! All 4 of my kids loved it, and it’s very rare to make a meal they all love! I tried it with pork, too, and didn’t change anything else, and it was just as good (and still super inexpensive!).

We ate this tonight for dinner. I loved it…My kids finally warmed up to it. At first they weren’t sure what was in there but after tasting it they liked it. Hubby not home yet to try it. I added onions in and carmelized them just after I cooked the chicken. I maybe would put them in with it but it was an afterthought. I think this would be a fabulous base to add anything you might see in mongolian. Asparagus cuts would be good, water chestnuts, etc.
