Honey Lime Chicken recipe for freezer meals

This is a recipe that my family will eat a couple times per month.  We had it last night for dinner in fact. 🙂

Total Cost for this Meal:

At Save-A-Lot I bought some bags of brown rice for .79 per bag. I used half a bag for my family = .40
The Chicken was bought at Albertsons for $1.88 lb -I used 1.5 lbs = $2.82
The Can of Pineapple was .79 at Winco — all other ingredients I just always have on hand.
Total cost= $4.01 for my family of 6 for dinner!

This is one of my thrifty weeknight meals. Enjoy 🙂

Honey Lime Chicken Recipe

One of my family's favorite dinners, honey lime chicken is simple to make and delicious!

Ingredients
 

  • 4 Chicken Breasts cut into strips
  • 1 1/2 tsp garlic salt
  • 1 tbsp Oil
  • 20 oz can pineapple tidbits keep the juice!
  • 1/4 cup honey
  • 3 tbsp Lime juice
  • 2 tbsp Soy Sauce
  • 2 tsp Corn starch

Instructions

  • Cut the chicken into strips or bite sized pieces and sprinkle with garlic salt.
  • Heat oil in a skillet over med-high and add chicken.
  • Cook chicken until golden brown.
  • Drain the pineapple, keeping the juices.
  • Add 1/4 cup of the pineapple juice to the skillet.
  • Cover and simmer 6-8 minutes.
  • Remove the chicken from the pan.
  • Add honey, lime juice, soy sauce, cornstarch and remainder of pineapple juice to the pan.
  • Bring to a boil stirring constantly.
  • Cook and stir until thick and clear, about one minute.
  • Add chicken and pineapple tidbits last and heat through.
  • Serve over hot rice and it's cool to garnish with lime wedges or Chow Mein noodles.
  • To freeze this recipe, cook it all up as directed above. Then let it cool, and add it to a gallon size freezer bag. Label and freeze. Then warm it up and serve with fresh hot rice.

    Hey Karrie – I made some changes; my process went like this:

    I chopped a medium-sized yellow onion and two small orange peppers and added them to my biggest skillet with a little coconut oil. While those cooked on medium heat, I cut up my lean pork into smallish cubes, and chucked those into the skillet with the veggies. While that was on fire, I whisked together my “liquid” ingredients in a bowl: honey, lime, soy sauce and the pineapple juice from the tidbits can. I also added a little bit of water, maybe a 1/4 of a cup, because I had added more veggies and I wanted there to be a little more sauce.

    Before I poured the sauce liquid over the veggies and pork, I put the pineapple over them and set the snow peas on top of all of that. The rising steam from the sauce liquids cooked the snow peas to perfection. From there, it was pretty much your instructions: cook, drain liquids, make sauce, combine, serve over fluffy rice – and impress everyone. Thanks for this great recipe! 🙂

      I try to include a serving size on the recipes but on some of them I guess I didn’t! This recipe is 6 servings or 2 adults, 4 kids!

    Doubled this recipe last night for dinner and the freezer. Came out great with compliments from the family. My husband isn’t a huge fan of fruit + meat, but the lime juice made it balance out great and he said it was a keeper! Thank you for my very first dive into a freezer meal.

    Hi, Can I pre-cooked the rice and freeze it together with the chicken?

      You can freeze all the ingredients together BUT the rice. Rice mixed together with the sauce and then frozen will not create the same effect as having fresh rice. But you can cook rice up the day before and warm it up for your dinner to save time.

      I think it would still taste pretty good but the pineapple does add a lot of flavor especially when making the sauce with the juice. Maybe if you added a veggie like peppers or something to give it a different texture when eating. Let me know how it turns out!

    I made this tonight and was scraping the plate! This was yummy!
    I made a smaller amount I live alone and have a tiny ref/freezer)
    and had a half a large can of chicken so used that. As it is salty even after rinsing I used chopped garlic instead of garlic salt & added a few thin onion slices as I warmed the chicken in oil with garlic to add some flavor.
    I had no lime so used fresh lemon juice and squeezed a little on top when done. I was going to save some for tomorrow-didn’t happen! It was too good! I made extra rice for some fried rice for tomorrow. I have several children with families who could probably benefit from freezing ahead meals and I will send them a link over here. Thanks for sharing!

    If I triple the recipe I can freeze 3 of these? Will it not get freezer burnt in just a gallon bag?

    Does this freeze well? I just found your site and I’m in love with the idea of being able to freeze several meals then just warm them up! I get tired of cooking night after night lol.

      I just add it to my wok-style pan and heat it up. There is a sauce inside it so I cook it until its all nice and bubbly again.
