Seriously, if I hadn’t included “keto” in the name of this recipe, you’d have absolutely no clue that they’re low carb based on how good they taste. They are seriously that good.
Whether you’re headed to work or your kids need to get to school, these keto muffins are the perfect grab and go breakfast option to start your day off right.
Not only are these muffins low carb and delicious, but they’re so very easy to make. This recipe is really not much different from a standard muffin recipe. Just mix the ingredients, add them to a muffin pan and throw them in the oven. Easy peasy!

Ingredients
These muffins are made with simple, hearty and healthy ingredients, many of which you probably already have on hand! And if you don’t happen to have them, you should have no problem finding them all in your local grocery store.
This recipe calls for three of the most tried and true low carb ingredients out there: almond flour, Swerve and mozzarella cheese. I know, mozzarella cheese may sound a bit out of place, but just trust me, it works so well!
How To Make Keto Blueberry Muffins
Preheat the oven to 400° F. In a bowl, mix eggs by hand until well beaten and then fully combine with the cheese.
Mix in almond flour, brown sugar and baking powder.
Gently mix in the blueberries.
Grease a muffin tin and divide the batter between 9 muffins.
Bake for 8-13 minutes depending on your oven.
Can You Eat Muffins on a Keto Diet?
As long as the muffins are made with low carb ingredients like almond flour and a sugar substitute like Swerve, you can enjoy muffins guilt free! When it comes to living a keto lifestyle, you can enjoy most any food as long as you stay within your daily carb allowance and practice portion control.

Traditional muffins are high in carbs, but these low carb blueberry muffins give you all the flavor of a store bought muffin without the high carb count.
For instance, a store bought, name brand blueberry muffin has a whopping 56 grams of carbs per muffin. However, these low carb muffins only have about 7 grams of carbs per a serving! That’s 1/8th the carbs of the store bought muffins!
What is the Lowest Carb Flour?
When it comes to baking, almond flour is the lowest carb flour and the best flour for the job. It only has 3 grams of net carbs per a ¼ cup serving, and is also a great source of protein.
Tips And Tricks
- Mixing. Make sure that you use a whisk in your hands to beat the eggs and not a mixer. The recipe won’t turn out correctly if you use a mixer for this step.
- Batter. The batter will not be wet like a regular muffin mix. Do not add anything to it. Trust me, the batter will make delicious muffins!
- Grease. Make sure to grease the muffin pan well, that way the muffins don’t fall apart while trying to remove them from the pan.
- Bake. If you want a well done muffin with a crispy top, go 13+ minutes. But start keeping an eye on them at around 8 minutes of cook time.

Ingredients

- 1 cup almond flour
- 1 1/2 cups mozzarella cheese
- 1 tbsp Swerve brown sugar
- 1 tsp baking powder

- Bake for 8-13 minutes depending on your oven. If you desire a well done muffin with a crispy top, go 13+ minutes. But start keeping an eye on them at 8 minutes.
