Pizza night is one of my family’s favorite nights at my house. Ok, who am I kidding? It’s mine, too. I love pepperoni, sausage, canadian bacon and even plain ol’ cheese holds a little place in my heart. Now you know I love to grill and one night I tried grilling my pizza dough. The explosion of smoky flavor took my ordinary pizza to the next level! It makes me wonder why I haven’t been doing this all the time.
Which brings me to my problem–I am a very hands-on griller meaning I forget sometimes how hot the grill can be and reach out and turn the food with my hands. Some may call it laziness to not want to take the time to walk into the kitchen to grab a spatula but I prefer to call it enthusiasm for a good meal!
Well, after nursing my latest kabob burns, the perfect solution fell in my lap–Silicone Barbeque gloves. They protect my hands by allowing me to stay close to my food without getting burned. They are perfect for grilling up my favorite summer pizza–Hawaiian BBQ Chicken Pizza! Let’s get grilling!
The Perfect Grilled Pizza – Hawaiian BBQ Chicken Pizza
First, grill up the chicken seasoned simply with salt and pepper.
Next, make a quick marinade of equal parts honey, brown sugar and water and spoon over skewered pineapples. It mimics the flavor from Brazilian steakhouses and gives the pineapple extra pop on the pizza! Make sure you make a couple extra skewers so you can sample it while you finish making the pizza–trust me! 🙂
Add the pineapple to the grill for about 2 minutes on each side until it has char marks on each side.
When the chicken is cooked through, slather it in BBQ sauce so the flavors can soak in and add another element of BBQ on the pizza. I love to use my homemade BBQ sauce but you can use any of your favorite BBQ sauces. Cook for one more minute and then take the chicken and pineapple off the grill.
Slice the chicken and pineapple into bite-size pieces. Chop the washed cilantro and set it to the side for garnish.
Put cornmeal down on a pizza peel or a baking sheet before adding the dough. I like to use a little cornmeal so the dough slides off easier and adds a little texture to the crust. Roll out your dough. Here is where your creativity comes out. You can roll it into whatever shape you want it to be. I always try for the perfect circle but it usually ends up like this. Close enough, right?
Brush with olive oil and take it out to your hot grill.
Ease the dough off the peel oiled-side down so that the dough doesn’t stick to the grates. Then quickly brush the other side of the dough with oil and shut the grill door.
After about 2-3 minutes the dough will start to bubble up and the edges will brown. That is when you want to turn the pizza. And the time when your BBQ gloves come in handy to reach in and flip it!
Once it is grilled on both sides, take it off the grill.
Brush half of the BBQ sauce on the pizza paying special attention to the outside crust. No one likes dry crusts!
Then add your cheese, chicken and pineapple to the pizza.
Slide it back on the grill for two minutes or so until the cheese melts and the flavors combine together.
Take your perfectly grilled pizza off the BBQ–see how those gloves come in handy??–and add the finishing touches.
Pour the rest of your BBQ sauce in a ziploc bag and cut the corner so it forms a controlled stream of sauce. Pour it all over the pizza and then give yourself a pat on the back because no matter what you do, it looks awesome and tastes even better!
Add the cilantro and viola! It’s done. Beautifully perfect grilled pizza all cooked on the BBQ grill!

Perfect Grilled Pizza {Hawaiian BBQ Chicken}
Ingredients
Homemade pizza dough
- 1/4 cup Olive Oil
- 1-2 tbsp Cornmeal
Pizza Toppings:
- 1/2 - 3/4 cup BBQ sauce
- 1 cup Mozzarella Cheese
- 1 cup Grilled Pineapple
- 1 large Grilled Chicken Breast
- Handful of Chopped Cilantro
Instructions
- Roll out your favorite homemade pizza dough on a cornmeal-lined pizza peel. Brush with olive oil.
- Slide the dough onto a 500 degree grill oil-side down. Quickly brush the other side of the dough with olive oil. Cook for two minutes with the lid down. Flip the dough and cook 2 more minutes on the other side.
- Brush BBQ sauce on the pizza crust. Add cheese, grilled pineapple, and grilled chicken on top of the pizza.
- Slide the pizza back on the grill for two more minutes or until the cheese is melted. Take the pizza off the grill. Pour BBQ sauce on top of the pizza and toppings. Sprinkle chopped cilantro all over the pizza. Slice and enjoy!
